Chinta Chigru Mamsum Koora Ingredients: 750 gm mutton curry cut 100 gm tamarind leaves 10 gm chopped green chillies 15 gm chilly powder 10 gm dhaniya powder 5 gm jeera powder 5 gm turmeric powder 500 gm onions, sliced 100 ml oil 1 sprig curry leaves 20 gm ginger-garlic paste 5 gm garam masala, whole 250 gm tomatoes, chopped 1 coconut paste For garnish: coriander leaves salt, as required
Procedure: Heat oil in a hundi, crackle garam masal whole, add curry leaves, green chillies and onions and fry till brown. Add ginger garlic paste and saute for few minutes. Add all the masalas and fry. Add chopped tomatoes and coconut paste, cook for a while and add cleaned and washed mutton pieces and add stock or water and salt. Cook again for 15 minutes and add the tamarind leaves. Cook again for 15 minutes or till the mutton pieces become tender. Serve hot garnished with chopped coriander.
