Guthi Venkai Ingredients: 500 gm brinjal 500 gm dhania powder 100 gm chilli powder, 10 gm turmeric 150 ml mango pickle (chopped) Salt to taste 50 gm peanut powder 50 gm roasted dal powder, 1 tsp asafoetida 25 gm fried cashewnut powder 5 gm mustard seeds 1 gm methi seeds 3 gm Bengal gram 3 gm urad dal 2 gm jeera, 5 red chillies 100 gm onion, 2 sprigs curry leaves
Procedure: Take brinjal and split into four. Do not separate. Add all the powders to the pickle and mix properly. Stuff this mixture into the brinjal and steam for five minutes. Remove and keep aside. Heat oil, add all dry spices, chopped onion, ginger-garlic paste and fry till golden brown. Mix steamed brinjal with this mixture and serve hot, garnished with chopped coriander leaves.
